Beef and Rice Burritos

Ingredients

Tortilite Classic Flour Tortillas 12” 6 pc
olive oil 1 tbsp
Finely Chopped Brown Onion 1 pc
Diced Red Capsicum 1 pc
Crushed Garlic Cloves 1 pc
Minced Lean Beef 500g
Drained and Rinsed Black Beans 400g
Drained and Rinsed Corn Kernels 300g
Salt-Reduced Taco Seasonings 30g
Mild or Medium Taco Sauce 200g
Thinly Sliced Spring Onions 2 pcs
90-Second Microwave Brown Rice 250g
Mexican Mozzarella Cheese 150 g
Salt and Pepper, To Taste
Sour Cream, For Serving
Lime Wedges, For Serving

Instructions

Preheat the oven to 220°C / 200°C fan-forced.

In a large frying pan, heat oil over medium-high heat. Add the brown onion, capsicum, and garlic. Sauté,stirring, for 2 minutes or until slightly softened. Add the beef mince and cook, breaking it up with a wooden spoon, for 5 minutes or until browned and cooked through.

Add the beans, corn, and taco seasoning. Stir for 1 minute or until fragrant. Add the sauce and spring onion, then continue to cook, stirring, for 2 minutes or until heated through. Season with salt and pepper.

Meanwhile, prepare the rice according to package instructions.

Warm the tortillas according to package instructions. Place tortillas on a flat surface. Divide beef mixture along the centre of each tortilla. Top evenly with rice and Mexican cheese. Roll up tightly to enclose the filling. Wrap burritos in foil. Bake for 5 minutes or until cheese melts. Serve the burritos with sour cream and lime wedges.
